TASTING NOTES FOR OUR AWARD-WINNING WINES

Winemaking

Our grapes are whole bunch pressed within 12 hours of harvest and the juice is transferred into stainless steel tanks; our sparkling wines undergo a ‘Traditional Method’ second fermentation in the bottle and are then laid down in a temperature-controlled cellar for six months; the sparkling wines are then disgorged approximately eighteen months after harvesting and released for sale a few months later.

Viticulture / Sustainability

The grapes used in our wines come from four parcels of Seyval Blanc and Bacchus vines, the oldest of which were planted in 1985 and the youngest in 2021; our soil type is predominantly free draining Upper Greensand – a feature of which is the presence of large slabs of heavy, dense ragstone, which increases heat accumulation during the day and boost ripening potential at night; the vines’ canopies are leaf plucked during the height of the growing season on the side of the rows which attract afternoon sunshine in order to expose the fruit for enhanced flavour development; the grapes are harvested by hand in mid to late October by friends, family, and volunteers.

Tasting Notes & Food Pairings

Our ‘Traditional Method’ English sparkling wines are pale straw yellow in colour, displaying a rich nose of English apples and pears followed by exquisite citrus fruits and then delivering minerality on the palate. They are vibrant wines, made from vines over 30 years old, with ageing potential although ready to be enjoyed now. Godstone sparkling wines are dry and fruity ready to provide a touch of fun and festivity to any celebration.


Our sparkling and still wines are ideal as an aperitif, or with cheese, and are the perfect partner for chilled seafood such as prawns, oysters, calamari, and smoked salmon.

This vibrant wine made from 25-30 year old vines is best drunk young and is ready to be enjoyed now. A dry and fruity wine which will provide a touch of fun and festivity to any celebration.

Our wines are available to purchase directly from the Cellar Door on our Open Days, which are held periodically throughout the year.
